Do shelf-stable pickled vegetables in vinegar count as fermented food?
Generally, no. Most pickles, sauerkrauts, and red cabbages found on ambient, unrefrigerated supermarket shelves are preserved using vinegar and subjected to heat pasteurisation during canning. While heat pasteurisation makes jars shelf-stable for months, the high temperatures destroy the delicate live bacterial cultures. While these vegetables still provide dietary fibre, they do not deliver live probiotic benefits. To get live cultures, look for unpasteurised products in the chilled section or make your own at home via lacto-fermentation.
